Cocoa Almond Olive Oil Cake
Blurb:
This rich, moist cake brings a wholesome twist to dessert with almond meal, olive oil, and cocoa. Not too sweet, deeply satisfying—and totally pantry-friendly.
Ingredients:
- 1 cup almond meal
- ½ cup wholemeal flour
- ½ cup cocoa powder
- ¾ cup coconut sugar
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup olive oil
- 2 eggs
- ½ cup almond milk
- 1 tsp vanilla
Instructions:
1. Preheat oven to 180°C. Line or grease a 20cm round cake tin.
2. Whisk almond meal, flour, cocoa, baking soda, sugar, and salt in a large bowl.
3. In another bowl, mix olive oil, eggs, milk, and vanilla.
4. Combine wet and dry ingredients. Stir until smooth.
5. Pour into the cake tin and bake for 25–30 mins. A skewer should come out clean.
6. Let cool before slicing.
