Classic Falafel with Tahini Dressing
Blurb:
A Middle Eastern classic that’s crunchy on the outside, fluffy on the inside, and full of flavour. Made with pantry staples and perfect for wraps, salads or on their own with a drizzle of creamy tahini dressing.
Ingredients:
- 1 cup dried chickpeas (soaked overnight, not canned)
- ½ onion, chopped
- 3 garlic cloves
- 1 cup fresh parsley or coriander (or mix)
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
- 1–2 tbsp chickpea flour (or plain flour)
- Olive oil for shallow frying
Tahini Dressing:
- ¼ cup tahini
- Juice of ½ lemon
- 1 small garlic clove, minced
- 2–4 tbsp water (adjust for consistency)
- Salt to taste
Instructions:
1. Drain soaked chickpeas. Add them with onion, garlic, herbs, and spices to a food processor.
Blend until coarse but combined.
2. Stir in flour. Chill mixture for 30 mins.
3. Shape into small balls or patties.
4. Heat oil in a frying pan and cook falafel until golden on each side.
5. For dressing, whisk ingredients until smooth and creamy.
6. Serve warm falafel with dressing, pita, or salad.

“Falafel mix too wet? Add a little more flour to bind it—don’t overblend!”

“Add a dash of ground cinnamon or chilli flakes for a bit of flair. Serve with pickled turnips if you can find them!”
